Foodstarz Five #7 Autumn Ingredients by Oli Harding



img_20161111_161203I love to use mushrooms in autumn when they are at their best. When I was younger I used to go mushroom picking with my Father and used to love the smell of the woods whilst we were collecting.  They also have a lot of umami and are great for vegan dishes.


Welll I am English and we love our taters!! Boiled, roasted, fried, baked, stuffed, chipped, creamed, mashed…..any way they are great. If I could only eat one ingredient this would be it!!

Apple Crisp…(or Granny Smith)

Well apples are a staple for English people….with pork or under a crumble or crust! Apple  crumble is probably the number 1 English dessert and I still crave it as a taste from home.

Brussel Sprouts

Another taste from my childhood and screams Autumn! I’m a cabbage freak and these little cabbages are my favourites….roasted with bacon, onion, garlic and chilli there are few vegetables that I enjoy more.

Sea Bass

Well I am English but I now live in Montréal, Canada. We are now into Sea bass Season and it is my favourite fish to cook and to eat. This time of year they are absolutely beautiful in size and texture.
