A formerly rotund child raised in American supermarket candy aisles, Chef Licker channelled a time of tragedy in his youth into a beautiful catharsis by dedicating himself to a lifelong love of pastry. His first forays into professional kitchens included stints at some of New York City’s most acclaimed restaurants, working with culinary greats such as Eric Hubert and the legendary Jean Georges. Chef Licker also contributed to the highly successful launch of Nobu Miami Beach and learned first-hand about union rackets at The Peninsula New York, but it was an opportunity in Shanghai that defined his career and opened a gateway to a whole new world.
From the Westin Bund Shanghai to The Venetian Macau, the JW Marriott Hong Kong to Bangkok’s Cé La Vi restaurants, Chef Licker infused vibrant new spices, ingredients and techniques into his desserts wherever he travelled in a career that culminated in winning the Iron Chef Thailand competition by a record-setting margin. With 56 original dessert recipes, Lickerland is Chef Licker’s ode to Asian culinary culture and a showcase of balance, creativity, knowledge of ingredients and novel pairings (such as butterscotch with white miso).
